Sunday, Lazy Sunday

So I had a busy weekend.  Hubby and I spent Friday and Saturday with friends, and had a great time.  But let's face it, a great time can be tiring, and I didn't feel like cooking.  At all.  In fact, Sunday morning, I crawled out of bed at the crack of noon.  Actually thats when my husband woke me up, I have no idea how long my slumber may have continued.  Anyway, the rest of my day was spent running errands and shopping, and as we started towards home, the thought of cooking became too much to bear.  What's a hungry vegan to do when requiring take out?  There are actually a ton of options, but today I chose Taco Bell.  Now most people would not think of Taco Bell as a likely vegan hang out, but as long as you don't mind a little junk food, Taco Bell has some great options.  Here's what was on the menu for me:
Fresco Bean Burrito
Nacho's with guacamole
Cinnamon Twists


Those aren't even your only options at Taco Bell.  Many menu items can be customized to fit vegan needs.  There is something so satisfying about eating junk food in front of the tv after a busy weekend.  This meal satisfies that salty junk food craving, and as far as fast food goes, it's not that terrible for you.  I know a lot of vegans shun processed food, but folks, I'm not that kind of vegan. ;)

  1. Great blog Sandy! I started eating meat again, but it's VERY seldom. I lean towards vegetarianism a lot more but this blog is pretty cool too (since I used to be a vegan). But nonetheless, it gives me ideas.

  2. Elle, to me, the point is that you try. No one has to be perfect all the time. I am sure you still get many benefits from simply having a low-meat diet.

  3. May I suggest a few things regarding your goal of great health? Please let that be water in your cup! Soda is "The Devil's Urine" (as stated on Dr. Oz last Friday) and contributes largely to diabetes, even diet, 'cause it's a lot of chemicals running through your kidneys. Cinnamon Twists...the cinnamon is all that's good for you. Taco Bell's guacamole is mostly oils and very little avocado. Jeff brought Taco Bell home last Thursday...7-layers and an all bean Mexican pizza...forget what else he got...and I made homemade guacamole, which is just avocado, tomato and onion and whatever seasonings you like...we use sea salt and a little organic chipotle dry seasoning for some kick and is also good to keep your arteries unclogged. Cayenne pepper is especially good for your arteries...has been known to stop heart attacks!

  4. Yeah, our Taco Bell is far away from us, so we eat it less than once a month. I don't drink soda, don't even keep it in my house, but I always have fruit punch at Taco Bell. I don't know why, but I need it there. Other than that, I am a water drinker.

  5. Yay...good that you don't drink sodas!!!! I have faith that you're going to make it...keep doing your research. There is literally tons of info at http://naturalnews.com...have even found some SDA sites that endorse http://naturalnews.com. They don't claim any religious affiliations or other biased reasons for the info they share, just straight up health info...it's like a health bible. :)
